These cocktails originated in Cuba where they were referred to as Highballs. The ingredients number only five and could not be simpler: white rum, sugar, lime juice, soda water, and mint. Fresh mint is the absolutely the most important ingredient to get the taste just right, and if must be freshly muddled. Combine 2 tablespoons of freshly squeezed lime juice, 2 teaspoons of pure cane sugar, one cup of crushed ice if that is your thing, with the mint, rum and club soda to taste. Add a few sprigs of mint as a garnish and enjoy this refreshing thirst quencher. There are variations of course, with some recipes doing without the club soda, or using simple sugar.
